To begin with, here’s Mum’s favorite of all ‘Cakes’!
She had a sweet tooth, so here it goes:
- Maida – 250 gms
- sugar – 250 gms
- Butter – 250 gms
- Eggs – 5
- Baking Powder 2 tsp
- Vanilla Essence – 1 tsp
- Dry fruits, and tuti-fruity – 50 gms each
- Spice powder – 1 tsp
Method: Beat egg whites and yolk separately. Beat butter and sugar. Chop fruits. Seive flour, baking powder, and spice powder.
Mix vanilla essence, fruits and sieved flour to the egg-butter-sugar mixture well with sufficient milk in slightly thick consistency.
Bake for 1 hour at 350F
