Corn Rice for Kids :)


Quick and easy to make, corn rice is a favorite among the kids.

Didi makes another awesome dish from Mummy’s recipe book.

Ingredients

  • Cooked Rice -1 cup
  • Onion – 1 small
  • Sweet corn – 1/4 cup
  • Pepper powder – 1 tsp
  • Butter / Ghee- 1 tbsp
  • Salt – as required

Method

  • In a kadai, add 1 tbsp ghee.
  • Add in the onions. Fry till the onions are translucent.
  • Add the sweet corn, pepper powder salt. Fry for 2-3 mins.
  • Add in the cooked rice. Fry again for about 2 mins.
  • Serve hot with roasted papad.

Raw Banana, Aloo and Matar Tikki


Tikki fast and easy, the perfect snack for the evening.

Ingredients

  • Boiled Raw banana – 1 large
  • Potato boiled and peeled  –  1 medium
  • Peas – 1/4 cup
  • Onion finely chopped – 2 tbsp
  • Ginger finely chopped- 1inch
  • Green Chillies finely chopped – 2
  • Garam masala powder – 1/4 tsp
  • Chilli powder – 1/2 tsp
  • Turmeric powder   – 1/4 tsp
  • Coriander powder – 1/2 tsp
  • Chat Masala – 1/2 tsp
  • Cumin seeds – 1 tsp
  • Bread slice -1
  • Corn flour – 1 tsp
  • Oil – 2 tbsp
  • Salt – As required

Method

  • In a kadai, add oil. When heated, add cumin seeds.
  • When they begin to crackle add onion. Fry for sometime.
  • Add ginger and green chillies .Add raw banana, potato and peas. Add all the powders. Mix well and mash a little.
  • Remove from heat and Allow to cool.
  • Dip the bread slice in water, remove immediately and squeeze excess water.
  • Add to the mixture. Add the corn flour as well. Mix well.
  • Shape them into round tikkis.
  • Shallow fry on both sides.
  • Serve hot with green chutney.

Yummy Chocolate Cake!


Chocolate cake is simply irresistible!

Ingredients:

  • Eggs – 4
  • Cocoa Powder – 1/2 cup
  • Butter – 3/4 cup
  • Powdered Sugar β€“ 1 1/4 cup
  • Baking POwder – 1 3/4 tsp
  • All purpose flour / Maida β€“ 1 cup
  • Vanilla essence – 1 tsp
  • Baking soda – 1/4 tsp
Method:
  • Keep all ingredients ready with the above mentioned measurements before you start preparing the cake.
  • If you do not have powered sugar, powder it and then measure. Here you will need 1 1/4 cup.
  • Sieve maida, baking powder, baking soda, cocoa powder thrice so that all are very well mixed.
  • Softened the butter before beating. Do not melt.
  • Eggs should be at room temperature. If refrigerated keep them out for about an hour before baking.
  • Grease the baking tray with butter and dust with Maida so that the cake comes off easily once baked. You can miss this step if you have a greased tray.
  • Preheat at 180-200 degree Celsius till it becomes hot
  • Beat butter and sugar in a bowl till light and fluffy. Make sure to beat in one direction
  • Beat eggs separately one by one with vanilla essence.
  • Add beaten egg to the butter-sugar and mix well. Do not allow the mixture to curdle
  • Mix the sieved flour to the butter-sugar-egg mixture slowly and fold to a dropping consistency. Do not allow to curdle
  • Pour this mixture into the baking tray and bake for 220 degree Celsius for about 20 minutes. Time may vary for each oven.
  • Check if the cake is baked with a tooth pick. The cake is done if it comes out clean.
  • Remove from oven and place it on a wire rack and allow to cool.

Choco Almond Muffins!

  • Butter – 4 tbsp
  • Eggs – 4
  • Almonds powdered – 2 tbsp
  • Vanilla essence – Β½ tsp
  • Cocoa powder – 2 tbsp
  • Maida –  5 tbsp
  • Sugar – 7 tbsp
  • Almonds chopped – 12

Method

Beat eggs and sugar in a bowl.

Add melted butter and beat. Mix in the mixture of maida, cocoa and almond powder.

Add vanilla essence.

Pour into muffin moulds, top with chopped almonds and bake for about 20 minutes in a moderate oven.

Aloo Paratha


Mummy’s delicious Paratha’s would kick start our day πŸ™‚

From aloo to paneer, Mum made the most amazing Parathas for us.

Here is our favourite aloo paratha πŸ™‚

Ingredients

For the dough

  • Wheat flour – 1 ΒΎ cup
  • Maida – ΒΌ cup
  • Salt – 1 tsp

For the stuffing

  • Potatoes – Β½ kg
  • Green chillies – 8
  • Ginger-garlic paste – Β½ tsp
  • Turmeric powder – ΒΌ tsp
  • Garam masala powder – ΒΌ tsp
  • Cumin powder – ΒΌ tsp
  • Finely cut coriander leaves
  • Salt

Method

Cook potatoes. Peel and mash

Add the rest of the ingredients to the mashed potatoes

Make medium sized balls from the dough. Flatten each ball and put the filling inside. Close and seal well all around. Press and dredge in wheat flour and roll out into thick parathas.  Heat β€˜tawa’ and fry the parathas using oil. Serve hot with curd or ketchup πŸ™‚

Chocolate Muffins


Mummy loved baking for her grandchildren. It gave her immense joy. She had baked chocolate muffins for Mehran and Manal, her grandchildren she simply adored πŸ™‚

Ingredients

  • Dark chocolate – 800 gms
  • Butter – 100 gms
  • Eggs – 4
  • Baking powder – 3 tsps
  • Maida – 1 1/3 cups
  • Sugar – 1 Β½ cups
  • Vanilla essence
  • Milk – half cup
  • Soda – ΒΌ tsp

Method:

Sieve maida, soda and baking powder. Melt chocolate, add essence

Beat the eggs. Mix everything in a bowl.Β PlaceΒ the paper cuts on the muffin tray.

Pour the mix into paper cuts and bake at 180 Celsius for 30 minutes.

Sadabahaar Aloo


Today, I tried my hand at cooking and made this potato dish which Mummy has shared in her recipe books πŸ™‚

Ingredients:

  • Small boiled potatoes – 250 gms
  • Chilli Powder
  • Dhania Powder
  • Garam Masala Powder
  • Pepper Powder
  • Haldi
  • Chaat Masala
  • Salt
  • Corn Flour – 2 tsp
  • Gram Flour – 2 tsp
  • Jeera Powder
  • Browned onion and tomato paste
  • Kasoori Methi
  • Ginger-garlic paste

Method:Β 

Heast 2tbsp oil in a non-stick Kadahai. Add ginger-garlic paste and fry. Add the potato mixture. Fry till done.

[This can be served as a dry snack]

For the gravy:Β 

  • Tomato Puree – Half Cup
  • Curd – Half Cup
  • Browned onion paste – 2tsp
  • Ginger-garlic paste
  • Chilli-dhania-hadli-garam masala powder
  • Jeera Powder
  • Corainder leaves

Serve with roti or naan πŸ™‚
